Default hex editing pokemon conquest

Okay this might be a weird topic (and the question might seem stupid to computer savy people).
I've been fiddling around with pokemon conquest, more specifficly with the base stat values (note that base stat values in pokemon conquest are different from the base stat values in main series pokemon games).
The problem I walked into is that the maximum decimal you can enter is 255 (FF in hex) in 1 byte, and MOST base stats are written in 1 byte.
The base values that start over 255 are written in 2 bytes and are thus limited to 510 (I don't know why it isn't 65xxx, but that is not relevent in this topic).
In normal pokemon games I never needed to go over the 255 base stat limit because that would but the pokemon I choose well over the competition, but in pokemon conquest most pokemon get close to 255, so actually setting it to 255 won't give a huge boost.
So what I'm trying to find out is how to go over that limit (if it is possible to begin with).

It's possible but would require a bit of space to assign values, and a lot of reverse engineering that would make it, in my opinion, not worth it.

Thanks for the answer, if you don't mind I have a second question.
In pokemon conquest, how can I find a specific offset, I know how to find base stats (since they are multiple values in a row) but in other instance I only know of 1 byte and therefor if I search for that value I end up getting a lot of results, how do I find out which one is the one I am looking for?
